Sand Tilefish

Latin Name:  Epinephelus morio

Sand tilefish are typically caught in deeper water over sand. These snake-like fish are in the family Malacanthidae and tend to build mounds out of rubble or shells to hide in. The fillets of the sand tilefish are firm and white but beware of their mercury load. Mercury is higher than average in these fish on the east coast and are off the charts on the west coast of Florida.
